Ingredients

1.5 lbs Ground Chuck (80/20)
0.5 lbs Ground Pork or Sausage
1 cup Panko Breadcrumbs
1/2 cup Whole Milk
1 medium Yellow Onion (minced)
1 tbsp Smoked Paprika
1 tbsp Garlic Powder
2 slices Thick-cut White Bread or Sourdough per sandwich
Condiments (Mayo, Yellow Mustard, or BBQ Sauce to taste)


Instructions

  1. Preheat your oven or smoker to 350°F (175°C)
  2. In a small bowl, combine the breadcrumbs and milk and let them soak
  3. In a large mixing bowl, combine the ground beef, pork, minced onion, smoked paprika, garlic powder, and soaked breadcrumbs
  4. Mix gently using your hands to avoid overworking the meat
  5. Shape the mixture into a loaf on a parchment-lined baking sheet
  6. Bake for about 45 minutes, then apply your favorite glaze and continue baking until the internal temperature reaches 160°F
  7. Let the meatloaf cool completely at room temperature before refrigerating
  8. Once chilled (ideally overnight), slice the meatloaf into thick slabs
  9. Assemble your sandwich using thick-cut bread and condiments
