Instructions
- Brown the ground beef in a large skillet over medium heat, breaking it into small crumbles
- Add finely diced red onions and minced garlic, seasoning with salt, pepper, and smoked paprika; sauté until onions are translucent
- In a separate bowl, whisk together Greek yogurt, mustard, and spices for the dipping sauce
- In the same skillet, place one tortilla, sprinkle cheese on one half, then layer with beef mixture and chopped pickles; fold tortilla
- Cook each side for 2-3 minutes until crispy and golde
- Let it rest, slice, and serve with dipping sauce
