Description

Crockpot Buffalo Macaroni & Cheese is a comforting fusion dish that marries the bold flavors of buffalo sauce with the creaminess of classic mac and cheese, all cooked effortlessly in a slow cooker.

16 oz Elbow Macaroni
3/4 cup Buffalo Wing Sauce
3 cups Sharp Cheddar Cheese
1 cup Monterey Jack Cheese
8 oz Cream Cheese
3 cups Whole Milk
1 cup Heavy Cream
1 packet (1 oz) Ranch Seasoning Mix
4 tbsp Butter
1/2 cup Blue Cheese Crumbles (optional)


Instructions

  1. Grease the inside of your slow cooker with non-stick spray or butter
  2. Pour the uncooked macaroni directly into the pot
  3. In a separate bowl, whisk together the milk, heavy cream, buffalo sauce, and ranch seasoning until smooth
  4. Pour the liquid mixture over the noodles, ensuring they are fully submerged
  5. Scatter the cubed butter and cream cheese over the top, then add two cups of shredded cheddar and all of the Monterey Jack. Stir gently to combine
  6. Set your slow cooker to low and cook for 2 to 3 hours
  7. Check the pasta for tenderness after about 2 hours and stir to incorporate melted cream cheese
  8. Sprinkle the remaining cup of cheddar over the top and cover for 10 more minutes until melted

Notes

Use freshly shredded cheese for better melting.
