Ingredients
12 oz spaghetti or linguine
1 cup ricotta cheese
1/2 cup grated Parmesan
1 lemon (zest and juice)
2 tbsp olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley or basil for garnish
Instructions
1. Cook pasta until al dente, reserving 1 cup pasta water.
2. Whisk ricotta, lemon zest, lemon juice, garlic, Parmesan, and olive oil in a bowl.
3. Toss hot pasta with the ricotta mixture, adding pasta water until creamy.
4. Season with salt and pepper, garnish with fresh herbs, and serve warm.
Notes
Use whole-milk ricotta for a richer sauce.
Add peas, spinach, or grilled chicken for variation.
Reserve pasta water to adjust sauce consistency.
