Ingredients
16 oz Dried Pasta (Spaghetti or Penne)
15 oz Whole Milk Ricotta Cheese
2 Large Fresh Lemons
1/4 cup Extra Virgin Olive Oil
1/2 cup Parmesan Cheese (Grated)
3 Cloves Garlic (minced)
1 cup Reserved Pasta Water
1/2 tsp Red Pepper Flakes (Optional)
Salt and Black Pepper to Taste
Instructions
- Bring a large pot of salted water to a rolling boil. Add your pasta and cook until al dente
- In a large mixing bowl, combine ricotta cheese, lemon zest, lemon juice, olive oil, and minced garlic. Whisk until smooth
- Add grated Parmesan and red pepper flakes to the mixture
- Reserve 1 cup of pasta water before draining the noodles. Add drained noodles to the bowl with the ricotta mixture
- Gradually pour in reserved pasta water while tossing the noodles with tongs until creamy and well combined
- Taste and adjust salt and pepper as needed. Serve immediately
