15 oz Whole Milk Ricotta Cheese
2 Large Fresh Lemons
1/4 cup Extra Virgin Olive Oil
1/2 cup Parmesan Cheese (Grated)
3 Cloves Garlic (minced)
1 cup Reserved Pasta Water
1/2 tsp Red Pepper Flakes (Optional)
Salt and Black Pepper to Taste


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add your pasta and cook until al dente
  2. In a large mixing bowl, combine ricotta cheese, lemon zest, lemon juice, olive oil, and minced garlic. Whisk until smooth
  3. Add grated Parmesan and red pepper flakes to the mixture
  4. Reserve 1 cup of pasta water before draining the noodles. Add drained noodles to the bowl with the ricotta mixture
  5. Gradually pour in reserved pasta water while tossing the noodles with tongs until creamy and well combined
  6. Taste and adjust salt and pepper as needed. Serve immediately
