Description

Pasta with spinach and tomatoes and feta is a creamy, Mediterranean-inspired dish made with simple, fresh ingredients. Perfect for weeknight dinners.


Ingredients

12 oz pasta (rigatoni, penne, or spaghetti)

1 block feta cheese

2 cups cherry or grape tomatoes

4 cups fresh spinach

3 tbsp olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil for garnish


Instructions

1. Preheat oven to 400°F (200°C). Place feta and tomatoes in a baking dish with olive oil, garlic, salt, and pepper.

2. Roast for 25 minutes until tomatoes burst and feta softens.

3. Meanwhile, cook pasta until al dente. Reserve 1 cup pasta water.

4. Mash roasted feta and tomatoes into a creamy sauce. Toss with pasta, adding pasta water to loosen.

5. Stir in spinach until just wilted. Garnish with fresh basil and serve warm.

Notes

Use a block of feta instead of crumbles for the best creamy texture.

Add spinach only at the end so it keeps its color and freshness.

Customize with roasted red peppers, olives, or grilled chicken.
