8 oz Feta Cheese

4 cloves Fresh Garlic
1/2 tsp Red Pepper Flakes
Salt and Black Pepper to taste
1/4 cup Fresh Basil
Instructions
- Bring a large pot of salted water to a rolling boil
- While the water heats, prep the vegetables by halving the tomatoes
- Once the water is boiling, add the pasta and cook until al dente
- In a large skillet, heat olive oil over medium heat, then add minced garlic and red pepper flakes until fragrant
- Add halved tomatoes and a pinch of salt; cook until softened, about 5-7 minutes
- Stir in fresh spinach and cook until wilted
- Reserve half a cup of pasta water, then drain the pasta
- Add pasta to the skillet, crumble feta cheese over top, and mix in reserved pasta water until creamy
- Garnish with fresh basil and an extra drizzle of olive oil before serving
