2 lbs Whole Carrots
3 tbsp Olive Oil
1.5 cups Ricotta Cheese
1/4 cup Honey
1 tsp Red Chili Flakes
1 tsp Lemon Zest
Salt & Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and peel the carrots, cutting any thick ones in half lengthwise. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat and spread in a single layer. Roast for 25-30 minutes
- While the carrots roast, prepare the whipped ricotta by blending ricotta cheese, a pinch of salt, and a dash of olive oil until smooth and fluffy. Set aside
- Make the hot honey by heating honey with red chili flakes in a microwave for 30 seconds. Stir and let sit
- Spread the whipped ricotta on a serving platter, arrange the roasted carrots on top, drizzle with hot honey, and garnish with lemon zest
Notes
For a milder version, omit the chili flakes. This dish is naturally gluten-free.
