Shrimp spinach pasta recipe that’s quick, creamy, and flavorful. Perfect for a weeknight dinner in 30 minutes.
Ingredients
12 oz linguine or spaghetti
1 lb raw shrimp, peeled and deveined
4 cups fresh spinach
3 tbsp olive oil
3 cloves garlic, minced
1/4 cup grated Parmesan
1/2 lemon, juiced
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Cook pasta until al dente. Reserve 1 cup pasta water.
2. Heat olive oil in skillet. Sauté garlic until fragrant, then add shrimp. Cook until pink.
3. Add spinach and stir until just wilted.
4. Toss pasta with shrimp and spinach mixture. Add lemon juice, Parmesan, and pasta water as needed.
5. Season with salt, pepper, and garnish with parsley before serving.
Notes
Use raw shrimp for the best flavor and texture.
Add spinach only at the end so it stays fresh.
Reserve pasta water to create a creamy sauce without heavy cream.
