1 cup Organic Coconut Sugar
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Sea Salt
1.5 cups Dark Chocolate Chips (70% Cacao)
1 cup Roasted Almonds (finely chopped)
Instructions
- Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat
- Toast chopped almonds in a small skillet over medium heat until fragrant, then set aside
- In a heavy-bottomed saucepan, combine the butter and coconut sugar over medium heat, stirring constantly until it reaches 300°F (150°C)
- Remove from heat and stir in vanilla extract and sea salt. Pour onto prepared baking sheet and spread to a quarter-inch thickness
- Sprinkle dark chocolate chips over the hot toffee and let sit for 3 minutes, then spread chocolate into a smooth layer
- Sprinkle toasted almonds on top and press down gently. Allow to cool completely, then break into pieces
Notes
Use a heavy-bottomed pot to prevent burning and monitor temperature carefully.
Store in an airtight container for up to two weeks. Freezes for up to three months.
